Mexican food is one of the most exciting and varied cuisines in the world. The tasty diet consists of meat, fish, seafood, poultry, vegetables, fruit and more. In the center of Mexico, you will find antojos, which are snacks similar to tapas. Salsa is mixed with cheese, onions, and beans for an enchilada filling or served with fish. Chefs in this region combined indigenous ingredients with imported foods to make new, exciting dishes.

Baja California culinary gems include steak-filled tacos, shellfish-stuffed chili peppers, and clams. Clambake is often made in this area and aromatic herbs give it a wonderful aroma and flavor. There are more than six hundred and fifty kinds of marine creatures in the coastal waters around Baja California.
Fish and seafood are enjoyed throughout the region by the Pacific shore and you will find these ingredients in many Mexican recipes. Little sandwiches called botanas are made here. Crayfish-stuffed tamales and shrimp-stuffed ones are also famous in the area.
Clams, oysters, squid, shrimp, and octopus are used to stuff tostadas and ceviche is popular too. Ceviche is fish flavored with chilies and other ingredients and then marinated in lime juice. Ceviche is typical of the area and fish tamales are a popular breakfast food along the Gulf shore. Traditional Mexican recipes abound on the Gulf shore and these are made with octopus, crab, red snapper, sea bass and crayfish.

Ever since the 1800s, Puebla cuisine has been popular. Many recipes reflect Hispanic, oriental, Aztec and Arabic cuisines by blending spice, sourness, sweetness, and saltiness. Baked vegetables are stuffed with creamed nuts and fresh parsley in this area and peppers are filled with pine nuts, raisins, almonds, and ground meat. These aromatic recipes are famous in Puebla. Mole poblano is also very good and this is a savory chocolate chili sauce, which is served with poultry or meat.
Fried grasshoppers, toasted corn tortillas, pork in banana leaves and string cheese are typical Mexican food recipes of the Isthmus region. Roasted, fruit-stuffed pork is also popular and a sweet and sour tomato juice-garnished beef tongue recipe has been served here for many years. You will find seafood chowders and fruit-based desserts in the Isthmus area, as well as tamales and mole sauce. There are various mole recipes from this area and each has a different taste.
The Mayas who originally inhabited the Yucatan Peninsula used to serve deer and pheasant to their rulers. The cuisine improved with the introduction of lemons, oranges and sour lime and the Spanish influence can be seen in the sweet and sour pork, seafood antojos, and soft tortillas with sweet lime soup recipes. Crayfish, shrimp, and squid are typical of the region, as are dog fish, pompano, crab, and octopus.
