Polar Bear

With a motion picture camera, how would one properly expose for a white polar bear playing in the snow?

My professor asked us a classic film school question. How would one film a polar bear playing in the white snow. I know it has something to do with exposure, but I am not sure exactly how to answer this question. Any help?

With proper lighting, such as at late afternoon or early morning sun, shadows will be more distinct and easily filmed. It is with the shadows that various white on white shapes can be distinguished.
